Put the brown and white sugars into a bowl, pour the slightly cooled, melted butter over them and beat together. Cream the butter and sugars together until very light and fluffy, then beat in the egg and vanilla. Once combined, stir in the flour, bicarb, chocolate and ¼ tsp salt. Line two baking sheets with greaseproof paper.

  1. Preheat oven to (375 degrees F) (190 degrees C) with rack in the center of the oven...line two baking sheets with parchment paper.
  2. In a bowl, beat the butter until smooth and creamy..add white and brown sugers and beat for about 2 minutes...beat in eggs one at a time , mixing after each addition..add vanilla and beat until incorporated..
  3. In separate bowl , mix flour,baking soda and salt..add the dry ingredients to the wet ingredients until combained...adding the chocolate chips while mixing..if mixture is too soft cover and refrigerate until firm ( from 30 min to 2 hours )..
  4. For large cookies , use about a 2 tbsp icecream scooper or with two spoons drop 2 tbsp of dough onto prepared parchment paper.
  5. Bake for about 10-15 minutes ...or until golden brown around the edges...cool on wire rack.
